SOUTH STYLE STUFFED BRINJAL / SAGALAY

This is am extremely yummy side dish of stuffed brinjal like any other bharwa baingan of North. Use of freshly roasted spices along with fried coconut gives a very distinct south indian feel in every meal u include this . Hope u like this recipe let me know how u like it

INGREDIENTS

1. Fresh grated coconut 1and half cup
2. Lime size tamarind ball
3. Salt to taste
4. Small brinjal 20 pieces

????FOR STUFFING

1. Oil 2tsp
2. Coriander seeds 1tbsp
3. Urad dal 2tsp
4. Chana dal 2tsp
5. Cumin seeds 1tsp
6. Hing 1/2tsp
7. Dry red chillies 8

????FOR TEMPERING

1. Oil 3 tbsp
2. Mustard seeds 1tsp
3. Cumin seeds 1tsp
4. Urad dal 1tsp
5. Chana dal 1tsp
6. Dried red chilly 1
7. Curry leaves sprig 1

PROCEDURE

1. ROAST coconut in a dry fryingpan tossing gently over low heat
Set aside
2. Heat oil in same pan add ingredients for stuffing fry over low heat tossing gently till dals turns golden brown .
3. Mix in coconut tamarind salt and grind to a fine thick consistency add 1 to 1 and half tbsp
4. Cut across each base of brinjal and stiff it with the filling and set aside . Reserve the remaining stuffing
5. Heat oil for tempering in same pan add remaining ingredients for tempering and fry over moderate heat
6. Add stuffed brinjal salt and 1/4cup water sprinkle left over stuffing if any and cover the vegetable and simmer on low heat for 10 mins turning aides and allowing it to cook properly
7. Open pan fry for 2 mins and garnish with shipped coriander leaves
8. Serve hot
