PUNJABI PAKODA KADHI

Soft tasty besan flour dumplings are cooked with yoghurt that is mildly spiced. Perfect comfort food on those days where you don’t wanna go for khichdi kadi and can opt for this yummy delicacy. You can spice it up more with addition of green chillies but I feel this recipe is perfect and mild for daily eating

INGREDIENTS

1. Gramflour/besan 1cup
2. Sour yoghurt 2 cups
3. Turmeric powder 1/2tsp
4. Red chilly powder 1/2tsp
5. Oil 2tbsp
6. Cumin seeds 1/2 tsp
7. Fenugreek seeds 1/2tsp
8. Black cardamom 1
9. Cloves 2
10. Dry red chillies 4
12. Salt to taste

????FOR PAKODA
1. Gramflour/besan 1cup
2. Water 1/3 cup approx
3. Onion 1 big finely chopped
4. Potatoe 1 small finely chopped
5. Ginger 1/2 inch finely chopped
6. Green chillies 2 finely chopped
7. Red chilly powder 1/2tsp
8. Garam masala 1/2tsp
9. Coriander powder 1tsp
10. Baking powder pinch
12. Salt to taste

????FOR TADKA/TEMPERING

1. Oil 2tbsp
2. Cumin seeds/jeera 1/2tsp
3. Red chilly powder 1/4tsp

PROCEDURE

1. Mix yoghurt gramflour red chilly powder turmeric and 5 and half cups water to form lump free liquid. Add salt
2. In a heavy bottomed pan heat oil add cumin fenugreek seeds black cardamom and cloves add whole red chillies.
3. When cumin turns brown add yoghurt water mixture stir continuously till it boils after one good boil lower the heat and simmer for 15 minutes stirring continuously . Remove from fire keep aside.
4. To make pakoda mix gram flour with water make thick paste and add rest of the ingredients beat well to get a soft dropping batter
5. Heat oil add drop spoonful of batter and fry on medium heat till golden brown .
6. Add pakoda to kadhi.
7. For tempering heat oil in a pan add cumin seeds when it turns brown remove from heat add red chilly powder and pour into hot kadhi
8. Serve hot with boiled rice
