An interesting twist to the boring egg onion tomato curry is this variation. Have used coconut freshly ground spices and spinach leaves to give a simple comfort meal on a lazy Sunday afternoon lunch. This recipe is my take on it. Do try out and let me know how u like it


1. Coconut 1/2 cup
2. Coriander leaves 5tbsp
3. Mint leaves 5tbsp
4. Boiled spinach 1/2 cup
5. Coriander seeds 1tsp
6. Cumin seeds 1/2tsp
7. Peppercorns 4
8. Garlic cloves 4
9. Onions 1 finely chopped
10. Methi seeds a pinch
11. Salt to taste
12. Sugar 1/2tsp
13. Oil 2 tbsp
14. Lemon 1
15. Few curry leaves
16. Boiled eggs 4


1. Heat oil in a pan add cumin seeds coriander seeds methi seeds peppercorns garlic onions coconut cook till mixture looks light brown in colour
2. In a mixer blend all these with boiled spinach leaves coriander leaves and mint leaves and  1 Cup water to a fine paste
3. In a kadhai add the spice paste made with 1 Cup water cook till mixture comes to boil then cook on low flame for 10 minutes.
4. Add the cut boiled eggs and salt sugar
5. Mix well and serve hot
