GATTE KI SUBZI

Some delicacies don’t require any introduction . Gatte ki subzi being one of them.  This famous dish has spongy cubes made of gram flour that’s well spiced and simmered in thick gravy. It’s delicious as well as nutritious to eat. This had always been on my to do list and here it is all there for you guys. Do try this simple recipe and let me know how u like it

INGREDIENTS

???? FOR GATTE

1. Gram flour/besan 1 and half cups
2. Baking soda a pinch
3. Carom seeds/ ajwain 1/2tsp
4. Anardana1/2 1tsp
5. Cumin seeds/jeera 1/2 tsp
6. Coriander seeds 1/2 tsp
7. Asafoetida/ hing 1/2 tsp
8. Salt to taste
9. Oil 2tbsp
10. Curd 2tbsp
11. Red chilly powder 1tsp
12. 2 green chillies finely chopped
13. Coriander leaves 1tbsp

???? FOR GRAVY

1. 2 onions cut into 8 pieces
2. Garlic flakes 3 to 4
3. 2 green chillies cut to half
4. Green coriander leaves chopped 1tbsp
5. Tomatoes 2 blanched and pureed
6. Red chilly powder 1tsp
7. Coriander powder 2tsp
8. Garam masala 1tsp
9. Salt to taste

PROCEDURE

1. For gatta mix all ingredients with water to make a firm dough about 5 tbsp water . Grease hands with oil and make 4 rolls out of all the dough.
2. Put rolls in deep pan full of water boil them till colour changes to yellowish white for about 10 mins
3. Take them out in a plate cool and cut in 1 inch thick cube . Deep fry them for a minute don’t overfry or it will turn hard.
4. For gravy boil onions in water for 5 minutes remove water grind these and garlic together.
5. Heat 1 tbsp oil in pressure cooker saute onion garlic paste till it turns light brown now add green chillies and coriander.
6. Add tomatoes salt and saute till oil separates
7. Now add all masalas saute for a minute add gattas and w cup water and pressure cook for 2 whistles
8. Let pressure release on its own
9. Enjoy this with missi roti and chutney
