AVIYAL 

            The most delicious vegetarian gravy made in perlite household. It has variety of veggies coconut and minimum spices. Best had with boiled rice papad and pickle. Do try out this recipe and let me know how you like it. 

INGREDIENTS 
1. Coconut 1 cup 
2. Green chillies 4 
3. Cumin seeds 1tsp
4. Potatoes tendli carrot raw banana suran drumsticks cucumber carrot long beans all half cup each.
5. Coconut oil 1tsp
6. Curry leaves 1 sprig 
7. Mustard seeds 1 tsp
8. Urad dal half tsp.
9. Salt. 
10. Red chilly 2 
11. Curd half cup 
METHOD 
1. Grind coconut green chillies Jeera with little water to form fine paste 
2. In a pan add water add salt potatoes let it cook for 5 minutes. Add all other vegetables let it cook till done.
3. Add coconut paste check salt. 
4. Cook add coconut oil and curd with little water to form gravy 
5. For tadka heat little oil add mustard seeds curry leaves urad dal red chilly broken. Once spluttered add in avial.

4. Serve hot
